Best Cowboy Caviar Recipe

Cowboy Caviar, this is one of my favorite dishes! I grew up on this stuff, my dad called it his Texas Salsa and man was it always a hit! When I moved away and got married this was one recipe that, for the life of me, I couldn’t get my hands on. I would ask my dad for his recipe, and his response would always be, “It’s on the internet” or “I found it on Facebook”. Nice try dad but I’m almost positive you were making this dish long before you were even on Facebook. My dad is quite the chef, and everyone in my family knows it. Maybe he didn’t want to give me his recipe on the off-chance that I bring it to a family event and get all the glory for myself.

Anyway I never did het his darn recipe, instead I searched Pinterest for recipes. I tried a few but they still weren’t that homemade Texas Salsa taste I was looking for. So Instead I came up with my own, even adding a few ingredients my daddy never did, and darn tootin’ it’s pretty darn good! Now I can bring my dip to a family event and rightfully get all the glory to myself! Watch out dad there’s another cook in the family! Well not really but at least I make a good dip.

Here’s What You’ll Need:

  • 1 Can cornfullsizerender
  • 1 Can black beans
  • 1/2 Onion
  • 3-5 Roma tomatoes
  • 2 Avocados
  • Juice of 1/2 a lime
  • 1/2 Bunch of cilantro
  • 1/3 c Zesty Italian dressing
  • 1/3 c White vinegar
  • 1/2 tsp salt and pepper to taste


In a bowl, combine corn and black beans. Dice the onion and tomatoes removing the seeds from the tomatoes, this will help the dip to not be too full with liquid. Add onions and tomatoes into bowl. Next dice the avocados and spritz with lime juice before adding them to the bowl. The lime juices helps prevent the avocados from browning too quickly. Then add the rest of the lime juice into the mixture. Next Finely chop the cilantro, I use my food processor for this, and add to bowl. Lastly add the Zesty Italian dressing and vinegar. Stir to coat evenly and place in fridge for 1hr to let the flavors marinate or serve immediately with tortilla chips! Enjoy! [themify_icon icon=”fa-heart-o” link=”http://”] Cassie Jean
