Although Brian and I have been married 18 months, I hardly ever made dinner for us the first year because I was hardly ever home at dinner time and we moved in with my parents for 2 months before coming here to Kentucky for law school, so my fabulous momma would make us dinner. Now that we are here. so very far away from our families, I decided it was finally my time to make dinners; how domestic of me.
Unfortunately I don’t have any recipes under my belt, except maybe cold cereal and Nutella sandwiches but, unlike myself, my poor husband cannot survive on only those things. I have a feeling this is going to be our real “first year of marriage” full of burnt and awful dinners followed by hopefully many good dinners as well. So, in response, I have been scrounging Pinterest for delicious recipes, finding a long list of not so delicious, and a slightly shorter list of “came straight from the heavens deliciousness!”. In hopes to help you make your “not so delicious” list shorter, here are a few of our favorite recipes so far.
Greek Turkey Burgers by Budget Bytes
This one is by far my husband’s favorite and actually one of the very first dinners we made being married. It cost under $12 and take only 30 min to prepare and cook! We prefer to make the burgers smaller and place them on King’s Hawaiian rolls to make mini sliders and man, are they good! The combo of the burgers with the yogurt sauce, cucumber, and onion is mouth-watering just thinking about. I don’t have much experience with greek food, but this recipe has made me a believer!
The Best Homemade Alfredo Sauce Ever! by The Recipe Critic
I have a special place in my heart for Alfredo sauce. My mom used to make it from a package, adding sliced hot dogs to it when I was younger. I thought it was the best thing around, and my mom still thinks it’s gross. Maybe it was my mom’s cooking that made me love Alfredo, or “white sauce” as I would call it, or maybe it was the fact that when my parents would take me out for my birthday every year I would choose Olive Garden. As you can tell I love Italian food, with Alfredo being one of my favorites.
Many times have I have tried and failed at homemade Alfredo sauce. It always just didn’t taste right, or I managed to burn it once. So it was like the heavens opened up and brought me down this recipe because they couldn’t handle watching me kill more pasta with my terrible sauces.
I found this recipe while looking for something to make for company I was having over that coming Sunday. The recipe said “The best”, so I figured I would try it, and if it was “The best” I’d serve it for company. After tying I have to tell you this Alfredo sauce IS literally THE BEST Alfredo I have ever had! It’s creamy and thick and everything an Alfredo should be. I couldn’t believe that such an easy recipe could taste so good and so fast, under 20 min to make! I seriously made extra just so I could eat it throughout the week. So go on, try it, I promise you will not regret it.
Salsa Chicken Casserole by Budget Bytes
Yes, as you can tell I have recently developed a love for Budget Bytes! She always has delicious easy dinners that don’t cost very much to make. I actually just made this salsa chicken casserole on Monday and yum, yum, yum! It is divine, I’m a huge Mexican food lover, (along with my love for Italian food) and this one hits the spot.
This recipe is under $10, but I was surprised to find I actually already had everything in my pantry; double win for me. My husband really enjoyed this dish as well, and when the husband likes it, you know it’s good. We both added a bit of ranch, because we are good americans, and that just seemed to be what took it home for us. My only set back was I must have some how used the wrong rice because instead of 1 hour it took 2 hours to bake, either way it was delicious!
As you can tell I’m starting to get pretty good at this dinner stuff, I’ve even started experimenting on my own recipes! Last week’s count of bad dinners to good dinners was 1:4 (only made dinners 5 days) 80% is pretty darn good! Hopefully you’re a better cook than I am, or at least have more recipes to choose from.
